6 golden rules for storing and ageing wine
1. Maintain a constant temperature
Temperature plays a crucial role in the maturation of wine. We recommend storing your bottles in an environment of between 10 and 15°C. Sudden changes in temperature can alter the aromas and the maturing process. Tip: If your cellar does not naturally benefit from a stable temperature, it is advisable to install an air conditioning system specifically for wine cellars. These air conditioners regulate not only temperature, but also humidity, ensuring optimum conditions.
2. Controlling humidity
The ideal humidity level for a wine cellar is between 65 and 80%. Too dry an environment can cause corks to dry out, letting air in and oxidising the wine. On the other hand, too much humidity encourages mould, which can damage labels and affect the quality of the wine.
3. Protect wine from light
Light, particularly UV light, is the enemy of wine. It can cause undesirable chemical reactions that alter taste and aroma. It is therefore crucial to store bottles in a dark place, or to opt for tinted glass bottles, which offer better protection.
4. Store bottles horizontally
Storing bottles horizontally keeps the cork in contact with the wine, preventing it from drying out. A dry cork could let air in, which would accelerate the oxidation of the wine and compromise its quality.
5. Avoid vibrations
Vibration disrupts the wine ageing process by stirring up sediment and altering chemical compounds. It is therefore preferable to store your bottles in a quiet place, away from sources of vibration such as household appliances or ventilation systems.
6. The wine must be protected from surrounding odours
In a natural cellar, good ventilation is crucial to prevent the build-up of unpleasant odours that could be absorbed by the corks and affect the wine. These cellars need to be sufficiently ventilated to prevent persistent odours and possible mould growth. When a wine cellar air conditioner is installed, the opposite is true: the cellar must be perfectly airtight and insulated to play its role correctly and preserve the wine in the best possible conditions.
